Ingredients

1 lb ground turkey

1 medium zucchini, grated with excess moisture squeezed out

1/4 cup breadcrumbs (whole wheat or gluten-free as per preference)

1/4 cup grated Parmesan cheese

1 large egg

1 clove garlic, finely minced

1 tsp onion powder

1 tsp Italian seasoning

1/2 tsp smoked paprika

Salt and pepper to taste

Olive oil spray

Mini slider buns (or lettuce wraps for a low-carb option)

Optional toppings: sliced tomatoes, crisp lettuce, creamy avocado, or your favorite sauce (like aioli or tzatziki)

Instructions

Prepare the Zucchini: Start by grating the zucchini using either a box grater or a food processor. To remove excess moisture, place the grated zucchini in a clean kitchen towel, gather the towel's edges, and twist tightly to squeeze out as much liquid as possible. This crucial step will help keep your sliders from becoming soggy.

Mix the Ingredients: In a large mixing bowl, combine the ground turkey, squeezed zucchini, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, Italian seasoning, smoked paprika, salt, and pepper. Use your hands or a wooden spoon to mix the ingredients until they are just combined. Be careful not to over-mix, as this can make the sliders tough.

Form the Sliders: Gently divide the mixture into equal portions, approximately 2-3 tablespoons each, and shape them into small patties (sliders). You should end up with about 8 sliders.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes to ensure even cooking.

Air Fry the Sliders: Lightly spray the air fryer basket with olive oil to prevent sticking. Carefully place the slider patties into the basket in a single layer, making sure not to overcrowd them (you may need to cook in batches). Lightly spray the tops of the sliders with olive oil. Air fry for 10-12 minutes, flipping the sliders halfway through the cooking time, until they are golden brown and have an internal temperature of 165°F (74°C).

Assemble the Sliders: After cooking, remove the sliders from the air fryer and allow them to rest for about a minute. Assemble each slider on a mini bun or a crisp lettuce wrap, then add your choice of toppings for an extra flavor boost.

Serve: Enjoy your sliders immediately while they are warm and juicy. Pair them with a refreshing side salad or baked sweet potato fries for a well-rounded meal!
