Apple Cinnamon Breakfast Quesadillas

2 large flour tortillas

2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced

1 teaspoon ground cinnamon

2 tablespoons brown sugar

1 tablespoon fresh lemon juice

1/2 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened to room temperature

1/4 cup chopped walnuts (optional)

Butter or cooking spray for greasing the skillet

Maple syrup for drizzling (optional)

Instructions
 

Prepare the Apple Filling: In a medium mixing bowl, combine the diced apples, ground cinnamon, brown sugar, and lemon juice. Mix thoroughly to ensure the apples are evenly coated in the cinnamon and sugar. Allow the mixture to sit for about 5 minutes so the flavors can meld.

    Make the Cream Cheese Mixture: In a separate small bowl, blend the softened cream cheese with a pinch of ground cinnamon until smooth and creamy. This will be spreadable and add a rich flavor to the quesadillas. Set aside.

      Assemble the Quesadillas: On a clean, flat surface, lay one tortilla. Spread half of the cream cheese mixture evenly across the tortilla. Next, sprinkle half of the shredded cheddar cheese on top. Evenly distribute half of the cinnamon-apple mixture over the cheese. If using, add half of the chopped walnuts as well.

        Top and Prepare for Cooking: Carefully place the second tortilla on top of the filled tortilla. Gently press down to secure it, helping to keep all the delicious filling inside.
