1/2 cup diced cooked chicken or tofu (optional)

2 large eggs, beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce (or vegetarian alternative)

1 teaspoon sesame oil

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

2 green onions, sliced

1/4 cup roasted peanuts or cashews, roughly chopped

Salt and pepper to taste

Fresh cilantro leaves (for garnish)

Prepare Ingredients: If using day-old rice, break up any clumps with your fingers to ensure even cooking. Gather all your ingredients and have them prepped and ready to go for a smooth cooking experience.

    Heat the Pan: In a large non-stick skillet or wok, add 1 tablespoon of sesame oil. Heat over medium-high heat until it shimmers, creating a non-stick surface for cooking.

      Cook Eggs: Pour the beaten eggs into the hot pan, swirling gently to create a thin layer. Cook for 1-2 minutes until just set, then scramble gently until fully cooked through. Transfer the scrambled eggs to a plate and set aside.

        Sauté Vegetables: In the same pan, add another tablespoon of sesame oil. Introduce your mixed vegetables along with a pinch of salt. Stir-fry for about 3-4 minutes until the vegetables are vibrant and tender.

          Combine Ingredients: Add the cooked rice to the pan, breaking up any clumps that remain. Stir-fry for an additional 3-4 minutes, ensuring the rice is fully heated and well combined with the sautéed vegetables.

            Add Flavors: Drizzle the soy sauce and oyster sauce over the rice mixture. Sprinkle in the garlic powder and ground ginger, tossing everything together to ensure the rice is evenly coated. Allow it to cook for another 2-3 minutes to let the flavors meld.

              Finish with Chicken/Tofu & Nuts: If desired, add the diced chicken or tofu to the rice mixture along with the scrambled eggs. Stir for an extra minute until everything is heated through. Fold in the chopped nuts to add a delightful crunch.

                Garnish and Serve: Remove the pan from heat. Sprinkle sliced green onions and fresh cilantro leaves over the fried rice for a burst of color and freshness. Adjust seasoning with salt and pepper to taste.
