Ingredients

1 can (8 oz) refrigerated crescent roll dough

1 cup cream cheese, softened to room temperature

1 cup shredded sharp cheddar cheese

1/2 cup diced green chilies (your choice of canned or fresh)

1/4 cup finely chopped fresh cilantro (optional for garnish)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 egg, beaten (for egg wash)

Cooking spray or olive oil (for greasing the baking sheet)

Instructions

Preheat Your Oven: Set your oven to preheat at 375°F (190°C). While it's heating, take a baking sheet and lightly grease it with cooking spray or a drizzle of olive oil.

Prepare the Creamy Filling: In a medium mixing bowl, blend together the softened cream cheese and shredded cheddar cheese. Stir in the diced green chilies, chopped cilantro (if using), garlic powder, onion powder, cumin, smoked paprika, salt, and black pepper. Mix until all ingredients are thoroughly combined into a luscious filling.

Roll Out the Crescent Dough: Unroll the refrigerated crescent roll dough on a clean surface. Carefully separate it into triangles at the perforations, maintaining their shape.

Add the Filling: At the wide base of each dough triangle, place 1-2 tablespoons of the cheesy green chili filling. Gently fold the triangle over the filling, then roll it up towards the pointed end, making sure to completely enclose and seal the filling.

Apply the Egg Wash: Arrange the rolled cheese bombs on the prepared baking sheet. Use a brush to evenly coat the top of each bomb with the beaten egg, which will create a beautiful golden crust as they bake.

Bake to Perfection: Place the baking sheet in the preheated oven and bake for 12-15 minutes. Watch closely as they puff up and turn a beautiful golden brown.

Cool and Serve: Once baked, remove the bombs from the oven and allow them to cool for a few minutes. Serve them warm as a delightful appetizer or snack, and consider pairing with a side of fresh salsa or creamy guacamole for dipping.
