1 ½ cups rolled oats

1 cup whole wheat flour

½ cup packed brown sugar

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup melted coconut oil (or unsalted butter)

¼ cup maple syrup

For the Berry Filling:

2 cups mixed berries (can use fresh or frozen, such as strawberries, blueberries, and raspberries)

1 tablespoon cornstarch

2 tablespoons honey or agave syrup

1 teaspoon vanilla extract

Juice of ½ lemon

For Topping (optional):

¼ cup chopped nuts (such as almonds or walnuts)

Additional berries for garnish

Greek yogurt or plant-based yogurt for serving

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it with cooking spray to prevent sticking.

    Make the Oat Base: In a large mixing bowl, combine the rolled oats, whole wheat flour, packed brown sugar, salt, and ground cinnamon. Pour in the melted coconut oil and maple syrup. Mix thoroughly until the ingredients are well combined and form a crumbly texture.

      Form the Cups: Scoop about 2 tablespoons of the oat mixture into each muffin cup. Using your fingers or the back of a spoon, press the mixture firmly into the bottom and up the sides to create a small cup shape. Set aside a small amount of the mixture for topping later.

        Prepare the Berry Filling: In a medium-sized bowl, gently mix your chosen berries with the cornstarch, honey (or agave syrup), vanilla extract, and lemon juice. Stir carefully until all the berries are evenly coated with the mixture.
