Ingredients

1 sheet of puff pastry (thawed)

8 oz cream cheese (softened to room temperature)

1/3 cup powdered sugar

1 tsp vanilla extract

1 cup fresh blueberries (plus extra for garnish)

1 egg (beaten, for egg wash)

1 tbsp lemon juice

1 tbsp cornstarch

Zest of 1 lemon

Pinch of salt

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Cream Cheese Filling: In a medium-sized mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or a spatula to blend until smooth and creamy. Set this mixture aside.

Combine the Blueberry Filling: In a separate bowl, gently mix together the fresh blueberries, lemon juice, cornstarch, lemon zest, and a pinch of salt. Take care to stir gently to ensure the blueberries remain intact.

Roll Out the Puff Pastry: Lightly flour your countertop or a large cutting board. Roll out the thawed puff pastry sheet to remove any creases and achieve an even thickness. Cut the pastry into four equal squares.

Create the Danish Shape: For each square, make a smaller square cut (or diagonal slits) from each corner; ensure that you do not cut all the way through, leaving room to fold the corners over the filling.

Assemble the Danish: Place a generous spoonful of the cream cheese filling in the center of each pastry square. Then, add a generous spoonful of the blueberry filling on top of the cream cheese.

Fold the Corners: Carefully fold the corners of the pastry over the filling, pinching the edges together to secure the shape. Brush the exposed areas of the pastry with the beaten egg to promote a beautiful golden finish during baking.

Bake the Danishes: Arrange the assembled Danishes on the prepared baking sheet, ensuring they are spaced apart. Bake in the preheated oven for 18-20 minutes, or until they are puffed up and golden brown.

Cool and Garnish: Once baked, remove the Danishes from the oven and allow them to cool slightly on a wire rack. Garnish each Danish with a few additional fresh blueberries on top for added color and flavor.

Serve: Serve your delightful blueberry cream cheese Danishes warm, or let them reach room temperature before enjoying!
