1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

8 oz fettuccine pasta

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup fresh spinach

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Season the Chicken: In a medium bowl, combine the bite-sized chicken pieces with the Cajun seasoning. Toss well until the chicken is evenly coated in the spices. Set the seasoned chicken aside to absorb the flavors.

    Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the fettuccine and cook according to the package instructions, usually about 8-10 minutes, until al dente. Before draining, reserve 1/2 cup of the pasta water. Drain the pasta and set it aside.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, add the seasoned chicken pieces in a single layer. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and transfer it to a plate.

        Prepare the Alfredo Sauce: In the same skillet, reduce the heat to medium, then add the minced garlic. Sauté for about 30 seconds, just until fragrant (be careful not to burn it). Stir in the heavy cream and chicken broth, mixing well. Bring the mixture to a gentle simmer.

          Thicken the Sauce: Lower the heat to medium-low. Gradually add the grated Parmesan cheese to the sauce, stirring continuously until it melts and blends into a smooth, creamy sauce. If the sauce becomes too thick, gradually add some reserved pasta water until you reach your desired consistency.

            Combine Ingredients: Add the cooked fettuccine, halved cherry tomatoes, fresh spinach, and the sautéed chicken back into the skillet. Toss everything together until well incorporated and warmed through. Season to taste with salt and pepper.
