Ingredients

1 medium cauliflower head, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1 teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

8 small corn or flour tortillas

1 cup shredded red cabbage

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Cauliflower:

    - Preheat your oven to 450°F (230°C).

      - Line a baking sheet with parchment paper to prevent sticking.

        - In a large mixing bowl, combine the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk until evenly blended.

          - Gradually pour in the water, stirring continuously until you achieve a thick, smooth batter.

            Coat the Cauliflower:

              - Take each cauliflower floret and dip it into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

                - Arrange the coated florets on the prepared baking sheet in a single layer, making sure to leave space between each for optimal crisping.

                  Bake the Cauliflower:

                    - Place the baking sheet in the preheated oven and bake for 20-25 minutes. Halfway through, flip the florets to promote even browning and crispiness. They should be golden brown and crunchy when done.

                      Buffalo Sauce Bath:

                        - Once baked, remove the cauliflower from the oven and immediately transfer the florets to a large mixing bowl. Pour the buffalo sauce over the cauliflower and toss gently until all pieces are well coated in the spicy sauce.

                          Warm the Tortillas:

                            - While the cauliflower is baking, you can warm the tortillas to enhance their flavor and texture. Heat a dry skillet over medium heat and warm each tortilla for about 30 seconds on each side until pliable. Alternatively, wrap them in foil and place them in the oven during the last 5 minutes of the baking time for the cauliflower.

                              Assemble the Tacos:

                                - Grab a warmed tortilla and place a generous portion of the buffalo cauliflower in the center.

                                  - Top each taco with a handful of shredded red cabbage and a few slices of fresh avocado.

                                    Garnish and Serve:

                                      - Finish the tacos by garnishing with fresh cilantro and a squeeze of lime juice for an extra flavor kick.

                                        - Serve immediately and savor the delicious spice!
