Ingredients

4 large russet potatoes (approximately 2 pounds), peeled and cut into 1-inch cubes

1/2 cup unsalted butter, divided

1 cup whole milk (or cream for added richness)

1 cup shredded sharp cheddar cheese, with extra for topping

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

8 slices of crispy bacon, crumbled (reserve some for garnish)

1 tablespoon finely chopped fresh chives (optional, for garnish)

Instructions

Boil the Potatoes: In a large pot, place the cubed russet potatoes and cover them with cold water. Add a pinch of salt to enhance flavor. Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat and let the potatoes simmer for about 15-20 minutes, or until they are fork-tender when pierced with a knife.

Drain and Mash: After boiling, carefully drain the potatoes using a colander, then return them to the pot. Immediately add 1/4 cup of softened butter, the milk (or cream), sour cream, garlic powder, onion powder, and a generous amount of salt and pepper. Mash the mixture using a potato masher or a hand mixer until it reaches a smooth and creamy consistency. Gently fold in 1 cup of the shredded cheddar cheese and the crumbled bacon, being sure to reserve some bacon for garnishing later. Taste and adjust the seasoning as needed.

Prepare the Casserole: Preheat your oven to 350°F (175°C). Generously grease a 9x13-inch baking dish with cooking spray or additional butter. Transfer the smooth mashed potato mixture into the baking dish, spreading it evenly across the surface. Use a spatula to smooth the top for an even finish.

Add Toppings: In a small microwave-safe bowl, melt the remaining 1/4 cup of butter. Once melted, drizzle it evenly over the top of the mashed potatoes. Sprinkle a layer of additional shredded cheddar cheese and the reserved crumbled bacon on top for a deliciously crispy finish.

Bake: Carefully place the casserole in your preheated oven. Bake for 20-25 minutes, or until the top is bubbly and has turned a beautiful golden brown.

Garnish and Serve: After baking, remove the casserole from the oven and let it cool for a few minutes to set. If desired, garnish with freshly chopped chives for a pop of color and flavor. Serve warm and enjoy the delightful cheesy and savory goodness!
