Ingredients

For the Meatballs:

1 pound ground turkey

1 cup whole wheat breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

For the Filling:

1 cup sharp cheddar cheese, cubed or shredded

For the Sauce:

1 cup marinara sauce (store-bought or homemade)

1 teaspoon olive oil

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Fresh basil leaves, for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.

Prepare the Meatball Mixture: In a large mixing bowl, vigorously combine the ground turkey, breadcrumbs, grated Parmesan, chopped parsley, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Ensure all ingredients are well incorporated for an even flavor throughout.

Form the Meatballs: Take approximately 2 tablespoons of the meat mixture and flatten it in your palm. Place a cube of sharp cheddar cheese in the center. Carefully fold the meat around the cheese to completely encase it, rolling it into a meatball shape. Repeat this process until all of the mixture has been formed into meatballs.

Bake the Meatballs: Arrange the meatballs on your prepared baking sheet, ensuring they are spaced apart to allow for even cooking. Bake in the preheated oven for 20-25 minutes or until the meatballs are golden brown and fully cooked through (internal temperature should reach 165°F/74°C).

Prepare the Sauce: While the meatballs are baking, pour the olive oil into a small saucepan over medium heat. Add the marinara sauce and warm it gently. If you crave a bit of spice, stir in the red pepper flakes. Allow it to simmer lightly for a few minutes until heated through, stirring occasionally.

Serve: Once your meatballs have finished baking, remove them from the oven and let them cool slightly. Serve the meatballs warm atop a generous bed of marinara sauce. If desired, add a sprinkle of fresh basil leaves for a pop of color and flavor.

Enjoy: Savor your delicious cheddar-stuffed turkey meatballs as a comforting main dish! They pair beautifully with spaghetti, make a great filling for subs, or can be enjoyed over a fresh mixed salad.
