Cheesy Broccoli and Chicken Rice Casserole

2 cups cooked chicken, shredded or diced

1 cup long-grain white rice, uncooked

2 cups chicken broth, low-sodium preferred

2 cups fresh broccoli florets (or frozen, thawed and drained)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of chicken soup

1/2 cup whole milk

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/2 teaspoon paprika (optional, for added flavor)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it's ready for baking.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until it becomes translucent. Then, add the minced garlic and continue to sauté for an additional minute, or until the garlic is aromatic.

      Combine the Base Ingredients: In a spacious mixing bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, whole milk, the sautéed onion and garlic mixture, garlic powder, onion powder, salt, pepper, and paprika. Use a spoon or spatula to stir thoroughly until all ingredients are well incorporated.

        Incorporate Broccoli and Cheese: Gently fold in the fresh broccoli florets along with half of the shredded cheddar and mozzarella cheeses, making sure they are evenly distributed throughout the mixture.

          Prepare for Baking: Transfer the mixture into a greased 9x13 inch casserole dish, ensuring it is spread evenly across the bottom.
