2 cups fresh broccoli florets, chopped into bite-sized pieces

1 cup uncooked rice (either white or brown)

2 cups vegetable or chicken broth

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk (whole or 2% preferred)

1/2 cup cream of mushroom soup (or any cream soup of your choice)

1 clove garlic, minced finely

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and black pepper, to taste

1/2 teaspoon paprika (optional, for an extra pop of color)

1/2 cup breadcrumbs (for a crunchy topping)

2 tablespoons butter, melted

Preheat your Oven: Begin by preheating your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with cooking spray or butter to prevent sticking.

    Prepare the Rice: In a medium saucepan, bring the vegetable or chicken broth to a gentle boil. Add your uncooked rice, stirring it once to incorporate. Cover the saucepan, reduce the heat to low, and let it simmer. Cook according to the package instructions until the rice is tender and has absorbed all the liquid (approximately 15-20 minutes for white rice, longer for brown rice). Once cooked, remove from heat and set aside to cool slightly.

      Blanch the Broccoli: While the rice is cooking, fill a small pot with water and bring it to a boil. Add the chopped broccoli florets and blanch them for 2-3 minutes until they turn vibrant green and are just tender. Drain immediately and plunge the broccoli into a bowl filled with ice water to stop the cooking process. Once chilled, drain the broccoli again and set it aside.

        Combine Ingredients: In a large mixing bowl, add the cooked rice, blanched broccoli, milk, cream of mushroom soup, minced garlic, onion powder, garlic powder, and paprika (if using).
