2 cups rotini pasta

1 lb boneless, skinless chicken breast, diced into bite-sized pieces

2 cups fresh broccoli florets

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the rotini pasta and cook following the package instructions until it reaches al dente texture (firm to the bite). In the final 3 minutes of cooking, carefully add the fresh broccoli florets to the pot to blanch. Once done, drain both the pasta and broccoli and set aside.

    Sauté the Chicken: While the pasta and broccoli are cooking, heat the olive oil in a large skillet over medium heat. Add the diced chicken breast, and season liberally with salt, pepper, and Italian seasoning. Sauté for approximately 5-7 minutes, stirring occasionally, until the chicken pieces are golden brown and fully cooked through. Transfer the chicken to a plate and set aside.

      Make the Alfredo Sauce: In the same skillet (do not wipe it clean), add a splash more olive oil if needed, then add the minced garlic. Sauté for about 30 seconds until fragrant but not browned. Pour in the heavy cream, stirring continuously, and bring the mixture to a gentle simmer. Gradually whisk in the grated Parmesan cheese until fully melted and the sauce is creamy and smooth.

        Combine Ingredients: Return the cooked chicken and drained pasta to the skillet with the Alfredo sauce.
