Cheesy French Onion Pasta Skillet

12 oz (340g) pasta (such as fusilli or penne)

2 large onions, thinly sliced

4 cloves garlic, minced

2 cups beef or vegetable broth

1 cup heavy cream

1 ½ cups shredded Gruyère cheese (or Swiss cheese)

1 cup shredded mozzarella cheese

3 tbsp unsalted butter

2 tbsp olive oil

1 tbsp balsamic vinegar

2 tsp fresh thyme leaves (or 1 tsp dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta of your choice and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside, reserving a splash of pasta water for later use if desired.

    Caramelize the Onions: In a large skillet over medium heat, combine the olive oil and 1 tablespoon of butter. Once the butter has melted, add the thinly sliced onions along with a pinch of salt. Cook the onions, stirring occasionally, for about 20-25 minutes, or until they turn a deep caramel color and are beautifully golden brown. If the onions begin to burn, lower the heat.

      Add Garlic and Thyme: Once the onions are caramelized, stir in the minced garlic and fresh thyme. Cook this mixture for an additional 1-2 minutes, until the garlic is fragrant but not burnt.

        Deglaze the Pan: Pour in the balsamic vinegar, using a wooden spoon to scrape up any brown bits stuck to the bottom of the skillet. This adds an incredible depth of flavor to your dish.

          Create the Sauce: Add the beef or vegetable broth and bring the mixture to a gentle simmer. Allow the broth to reduce slightly over the next 5 minutes. Afterward, stir in the heavy cream, letting it simmer together for another 2-3 minutes. Taste and season with salt and pepper as needed.

            Combine Pasta and Cheese: Add the drained pasta to the skillet, stirring well to incorporate everything evenly. Remove the skillet from heat and gradually mix in the Gruyère and mozzarella cheeses, stirring continuously until they have melted and are fully combined with the pasta.

              Finish with Butter: Stir in the remaining 2 tablespoons of butter for an extra touch of creaminess.

                Serve and Garnish: Spoon the cheesy pasta onto serving plates or into bowls. Garnish generously with chopped parsley, a sprinkle of fresh thyme, and additional cheese if desired for an appealing presentation.
