Ingredients

20 jumbo pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus an additional ½ cup for topping)

1 cup grated Parmesan cheese (divided into ½ cup and ½ cup for topping)

1 can (14 oz) artichoke hearts, drained and finely chopped

2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and well-drained)

2 cloves garlic, minced

½ tsp red pepper flakes (optional for a kick)

½ tsp salt

½ tsp black pepper

½ tsp Italian seasoning

2 cups marinara sauce (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) so that it's ready when you're done prepping.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook according to the package instructions until they are al dente, which typically takes about 9-11 minutes. Once cooked, drain the shells and place them on a lightly greased baking sheet to prevent sticking.

Prepare the Filling: In a spacious mixing bowl, combine the ricotta cheese, 1 cup of mozzarella, ½ cup of Parmesan, the chopped artichoke hearts, spinach, minced garlic, red pepper flakes (if you want a spicy kick), salt, black pepper, and Italian seasoning. Mix everything thoroughly until the filling is well combined.

Stuff the Shells: Using a spoon, carefully fill each cooked pasta shell with the spinach-artichoke mixture. Arrange the filled shells in a greased 9x13-inch baking dish with the seam side facing up.

Add Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring that each shell is generously coated with sauce for added moisture and flavor.

Top with Cheese: Sprinkle the remaining mozzarella and the other ½ cup of Parmesan cheese over the sauced shells for that delicious cheesy finish.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After that, remove the foil and continue to bake for an additional 15-20 minutes, or until the cheese is bubbly and has achieved a lovely golden brown color.

Garnish and Serve: After baking, carefully remove the dish from the oven and allow it to cool for a few minutes. Just before serving, garnish the dish with freshly chopped parsley for a splash of color and an aromatic finish.

                  Prep Time: 20 minutes | Total Time: 60 minutes | Servings: 4-6

                    - Presentation Tips: For an elegant touch, serve the stuffed shells in individual bowls or plates, garnished with extra parsley and a sprinkle of red pepper flakes for visual appeal. Add a side of crusty garlic bread for a complete meal experience.
