1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

5 cups fresh spinach, roughly chopped

6 large eggs

1 cup milk (whole or your preferred type)

1 cup shredded cheddar cheese

1 cup feta cheese, crumbled

1 cup cooked sausage (optional, feel free to use a plant-based alternative)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon crushed red pepper flakes (optional, for heat)

4 slices of whole grain bread, cut into 1-inch cubes

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with non-stick cooking spray or a touch of olive oil to prevent sticking.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent and soft. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook the Spinach: Add the chopped spinach to the skillet and cook, stirring frequently, until it wilts down, which should take about 2-3 minutes. Once wilted, remove the skillet from heat and let it cool slightly.

        Mix the Egg Base: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and crushed red pepper flakes (if using) until well combined and fluffy.
