4 large flour tortillas

1 cup shredded cheese (cheddar or a Mexican blend)

1 medium zucchini, grated

1 cup baby spinach, roughly chopped

1 cup bell peppers (choose red, yellow, or green), diced

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup black beans, rinsed and drained

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil (or cooking spray)

Optional: salsa, guacamole, or sour cream for serving

Instructions
 

Prepare the Veggie Filling: In a large mixing bowl, combine the grated zucchini, chopped baby spinach, diced bell peppers, corn kernels, and black beans. Season the mixture with ground cumin, garlic powder, salt, and pepper. Stir well until all the ingredients are evenly coated with the spices.

    Heat the Skillet: Place a large skillet on the stove over medium heat. Add 1 tablespoon of olive oil to the skillet and let it heat up. If using cooking spray, lightly mist the skillet to create a non-stick surface.

      Assemble the Quesadilla: Once the skillet is hot, lay one tortilla flat in the skillet. Sprinkle half of the shredded cheese evenly over the surface of the tortilla. Next, distribute half of the prepared vegetable mixture over the cheese. Top with the remaining shredded cheese before placing a second tortilla on top.

        Cook the Quesadilla: Allow the quesadilla to cook for about 3-4 minutes or until the bottom tortilla turns a golden brown and the cheese begins to melt. Using a large spatula, carefully flip the quesadilla to the other side. Cook for an additional 3-4 minutes, or until that side is also golden and crisp.
