1 cup fresh or frozen cherries, pitted

2 tablespoons soy sauce

2 tablespoons maple syrup (or agave syrup for a vegan version)

1 tablespoon rice vinegar

1 teaspoon cornstarch (optional, for a thicker glaze)

2 tablespoons sesame oil (for frying)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated (or 1/2 teaspoon ground ginger)

Salt and pepper, to taste

Sesame seeds and sliced green onions, for garnish

Prep the Tofu: Start by pressing the tofu to extract excess moisture; this will help it absorb flavors and develop a crispy texture. After pressing, slice the tofu into 1-inch cubes and season lightly with salt and pepper.

    Prepare the Cherry Glaze: In a small saucepan set over medium heat, combine the pitted cherries, cherry juice, soy sauce, maple syrup, rice vinegar, minced garlic, and grated ginger. Stir the mixture to blend and bring it to a gentle simmer. Once simmering, reduce the heat to low and let it cook for about 10-15 minutes, stirring occasionally, allowing the flavors to meld.
