Ingredients

For the dough:

2 cups all-purpose flour

1/2 teaspoon salt

1 tablespoon granulated sugar

1/2 cup cold unsalted butter, cubed

6-8 tablespoons ice water

For the filling:

3 medium apples (preferably Granny Smith or Honeycrisp), peeled and diced

1/2 cup brown sugar, packed

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional for extra warmth)

1 tablespoon freshly squeezed lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 egg, for egg wash

1 tablespoon milk, for egg wash

For serving:

Powdered sugar (optional, for dusting)

Instructions

Make the Dough: In a large mixing bowl, combine the flour, salt, and granulated sugar. Add the cold cubed butter to the bowl and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs with small pea-sized lumps. Gradually add ice water, 1 tablespoon at a time, mixing gently with a fork until the dough begins to hold together. Be cautious not to overmix. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes to chill.

Prepare the Filling: In a medium-sized bowl, combine the diced apples, brown sugar, ground cinnamon, nutmeg (if using), lemon juice, cornstarch, and vanilla extract. Toss until the apple pieces are evenly coated in the mixture. Allow the filling to sit for a few minutes to enhance the flavors.

Roll Out the Dough: On a lightly floured surface, roll out the chilled dough to approximately 1/8-inch thick. Use a round cutter or a glass to cut out circles about 4-5 inches in diameter. Gather any remaining scraps of dough, re-roll, and cut out additional circles as needed.

Fill the Hand Pies: Preheat your oven to 400°F (200°C). On one half of each dough circle, spoon 1-2 tablespoons of the apple filling. Take care not to overfill to prevent spillage during baking. Fold the dough over to form a half-moon shape and firmly pinch the edges to seal. Use the tines of a fork to crimp the edges, adding a decorative touch.

Prepare for Baking: Line a baking sheet with parchment paper and arrange the filled hand pies on it. In a small bowl, whisk together the egg and milk to create an egg wash. Using a pastry brush, lightly brush the tops of the hand pies with the egg wash, and make a small slit or two on the top of each pie to allow steam to escape during baking.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the tops are golden brown and flaky.

Cool and Serve: Remove the hand pies from the oven and transfer them to a wire rack to cool slightly. If desired, dust with powdered sugar before serving. Enjoy the delightful warmth and flavors of your homemade crispy cinnamon apple hand pies!
