Cinnamon Raisin Swirl Bread

4 cups all-purpose flour

1 packet (2¼ tsp) active dry yeast

¾ cup warm milk (110°F / 43°C)

¼ cup granulated sugar

1 teaspoon salt

1 teaspoon ground cinnamon

¼ cup unsalted butter, softened

2 large eggs

1 cup raisins (golden raisins preferred for added sweetness)

1 tablespoon ground cinnamon (for the filling)

¼ cup packed brown sugar (for the filling)

Instructions
 

Activate the Yeast: In a small mixing bowl, combine the warm milk with 1 tablespoon of granulated sugar. Sprinkle the active dry yeast over the milk and allow it to sit undisturbed for about 5-10 minutes, or until the mixture becomes frothy and bubbly.

    Prepare the Dough: In a large mixing bowl, sift together the all-purpose flour, the remaining sugar, salt, and ground cinnamon. In another bowl, beat the eggs and then mix in the softened butter until well combined. Pour the activated yeast mixture into the egg-butter mixture. Gradually add the dry ingredients to the wet ingredients, stirring until a rough dough forms.

      Knead the Dough: Transfer the dough onto a floured work surface. Knead the dough for approximately 8-10 minutes until it is smooth and elastic. If the dough feels too sticky, sprinkle a little additional flour on your work surface as needed.

        First Rise: Shape the kneaded dough into a ball and place it in a greased bowl. Cover the bowl with a damp cloth or plastic wrap, and let it rise in a warm environment for about 1 hour, or until it has doubled in size.

          Prepare the Filling: In a small bowl, mix together the raisins, brown sugar, and 1 tablespoon of ground cinnamon until the raisins are well coated. Set the filling aside.

            Shape the Bread: Once the dough has completed its first rise, gently punch it down to release any excess air. Roll the dough out on a floured surface into a rectangle measuring approximately 12 x 18 inches. Evenly spread the cinnamon-raisin filling mixture over the surface of the dough, ensuring coverage up to the edges.

              Roll & Shape: Starting from the long edge, carefully roll the dough into a tight log. As you roll, pinch the seam to seal it. Tuck the ends of the loaf under slightly, and place the rolled dough seam-side down into a greased loaf pan.

                Second Rise: Cover the loaf pan with a damp cloth and allow the dough to rise again for about 30-40 minutes, or until it has risen above the edges of the pan.

                  Preheat and Bake: Preheat your oven to 350°F (175°C). When the oven has reached the desired temperature, place the bread in the oven and bake for 30-35 minutes. The bread is done when it is a golden brown color and sounds hollow when tapped on the bottom.

                    Cool: Once baked, remove the bread from the oven and let it cool in the pan for approximately 10 minutes. Afterward, carefully transfer it to a wire rack to cool completely.

                      Slice & Serve: When the bread has cooled, slice it into generous pieces. Serve with a pat of butter or enjoy it plain for an irresistible sweet treat!
