1 lb (450g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup peas (fresh or frozen)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 cup beef broth

1 teaspoon dried or fresh thyme

1 teaspoon dried or fresh rosemary

Salt and pepper, to taste

2 tablespoons olive oil

For the Mashed Potatoes:

2 lbs (900g) potatoes, peeled and cut into cubes

1/2 cup milk

1/4 cup unsalted butter

Salt and pepper, to taste

Optional: 1/2 cup grated cheddar cheese for topping

Instructions
 

Prepare the Mashed Potatoes:

    - In a large pot, add the cubed potatoes and cover them with cold water. Sprinkle in a pinch of salt.

      - Bring the water to a boil over medium-high heat, then reduce the heat and let it simmer. Cook the potatoes until they are fork-tender, which should take about 15-20 minutes. Once done, drain them well.

        - Return the drained potatoes to the pot and add the butter and milk. Mash the potatoes with a potato masher or fork until they reach a smooth and creamy consistency. Season with salt and pepper to taste, and set aside.

          Cook the Beef Filling:

            - In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and diced carrots. Sauté these ingredients until they become tender, which should take about 5-7 minutes.

              - Stir in the minced garlic and cook for an additional minute, allowing the flavors to meld.

                - Add the ground beef to the skillet, breaking it apart with a spoon. Cook until the beef is browned throughout and no longer pink, taking around 7-10 minutes. Drain any excess fat if necessary.

                  - Incorporate the tomato paste, Worcestershire sauce, beef broth, thyme, and rosemary. Season the mixture with salt and pepper. Bring the filling to a gentle simmer and let it cook for about 10 minutes, allowing it to thicken slightly.

                    - Finally, fold in the peas and let them cook in the mixture for an additional 2-3 minutes before removing the skillet from heat.
