Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened at room temperature

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

¼ cup all-purpose flour (optional, for a thicker texture)

For the cherry topping:

1 can (21 oz) cherry pie filling

1 tablespoon lemon juice

Fresh cherries for garnish (optional)

Instructions

Preheat the oven: Start by preheating your oven to 325°F (160°C). To make removal easier later, line an 8x8-inch baking pan with parchment paper, allowing the edges to extend over the sides.

Prepare the crust: In a medium mixing bowl, combine graham cracker crumbs, melted butter, sugar, and vanilla extract. Stir until the mixture is well-blended and resembles wet sand. Evenly press this crumb mixture into the bottom of the prepared baking pan. Bake in the preheated oven for 10 minutes, then remove and let it cool slightly.

Make the cheesecake filling: In a large mixing bowl, use an electric mixer on medium speed to beat the softened cream cheese until smooth and creamy. Gradually add granulated sugar, mixing thoroughly until combined.

Incorporate the eggs: Add the eggs to the cream cheese mixture one at a time, ensuring each egg is mixed in well before adding the next. Follow with the vanilla extract and sour cream, mixing until the mixture is luscious and smooth. If you desire a thicker cheesecake, fold in the optional flour at this point.

Pour the filling: Gently pour the cheesecake mixture over the cooled crust, using a spatula to spread it into an even layer.

Bake the cheesecake: Place the cheesecake in the preheated oven and bake for 25-30 minutes. The edges should be set, while the center may still have a slight jiggle. Once done, turn off the oven but leave the cheesecake inside for an additional 10 minutes to set gently.

Cool and chill: After the baking time is complete, allow the cheesecake to cool at room temperature for about 30 minutes. Then transfer it to the refrigerator to chill for at least 2-3 hours or until completely firm.

Prepare the cherry topping: In a small saucepan, combine the cherry pie filling and lemon juice. Heat over medium heat until warmed through, then remove from heat and allow it to cool.

Assemble and serve: Once the cheesecake has fully chilled, lift it from the pan by the edges of the parchment paper. Carefully cut into 16 even bars. Top each bar with a generous spoonful of the cherry filling. For an extra touch of elegance, consider garnishing with fresh cherries.

Enjoy! Savor every bite of your deliciously creamy cherry cheesecake bars!
