1 lb (450g) boneless, skinless chicken breasts, thinly sliced

3 cups fresh broccoli florets

1 medium bell pepper, sliced (any color you prefer)

2 cloves garlic, finely minced

1-inch piece of ginger, finely minced

3 tablespoons low-sodium soy sauce

1 tablespoon oyster sauce (optional for added depth)

2 tablespoons vegetable oil, divided

1 tablespoon cornstarch

1/4 cup chicken broth or water

1 tablespoon sesame oil

2 spring onions, finely sliced for garnish

Cooked jasmine or brown rice, for serving

Marinate the Chicken: In a mixing bowl, combine the thinly sliced chicken with the soy sauce, oyster sauce (if using), and cornstarch. Mix thoroughly until the chicken is well-coated. Cover the bowl and let it marinate for at least 15 minutes to enhance the flavors.

    Prepare the Broccoli: While the chicken is marinating, bring a medium-sized pot of water to a boil. Once boiling, add the broccoli florets and blanch for 1-2 minutes until they are vibrant green and slightly tender. Drain the broccoli, and set it aside to keep warm.

      Heat the Oil: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

        Cook the Chicken: Add the marinated chicken to the pan in a single layer. Allow it to sear undisturbed for about 2 minutes until browned, then stir-fry for an additional 2-3 minutes until the chicken is cooked through. Once done, remove the chicken from the wok and set it aside on a plate.

          Sauté the Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Introduce the minced garlic and ginger, sautéing for approximately 30 seconds until they release their aroma. Next, add the blanched broccoli and sliced bell pepper, stir-frying for 3-4 minutes until the vegetables reach a crisp-tender consistency.

            Combine Ingredients: Return the cooked chicken to the wok with the sautéed vegetables. Pour in the chicken broth (or water) and drizzle with sesame oil. Stir everything together to fully combine, letting it cook for an extra 1-2 minutes to allow the sauce to thicken slightly.

              Garnish and Serve: Remove the wok from heat and garnish the dish with sliced spring onions. Serve immediately atop a bed of freshly cooked jasmine or brown rice for a complete meal.
