1 lb ground chicken

1 cup finely chopped cabbage

1/2 cup shredded carrots

1/4 cup green onions, sliced

2 cloves garlic, minced

1 tsp fresh ginger, grated

2 tbsp soy sauce

1 tbsp sesame oil

1 tsp cornstarch

Salt and pepper, to taste

For the Potsticker Wrappers:

2 cups all-purpose flour

1/2 cup water (plus additional for sealing)

1/4 tsp salt

For Cooking:

2 tbsp vegetable oil

1/2 cup water (for steaming)

For Dipping Sauce:

3 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp chili oil (optional)

1 tsp chopped fresh herbs (like cilantro, for garnish)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the ground chicken with the chopped cabbage, shredded carrots, sliced green onions, minced garlic, grated ginger, soy sauce, sesame oil, cornstarch, and a sprinkle of salt and pepper. Use your hands or a spoon to mix the ingredients thoroughly until well combined. Set this mixture aside for later use.

    Make the Dough: In a medium bowl, mix the all-purpose flour and salt together. Gradually pour in the water, stirring with a fork or your hands until a dough begins to form. Transfer the dough to a floured surface and knead it for about 5 minutes until it becomes smooth and elastic. Once kneaded, cover the dough with a damp cloth and let it rest for 30 minutes to allow the gluten to relax.

            Steam the Potstickers: Carefully pour in 1/2 cup of water into the skillet—be cautious as it will sizzle! Immediately cover the skillet with a lid and let the potstickers steam for about 5-7 minutes until the water has completely evaporated and the potstickers are cooked through.

              Make the Dipping Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and optional chili oil for a spicy kick. Garnish your sauce with a sprinkle of fresh herbs like cilantro for an extra burst of flavor.

                Serve: Once the potstickers are cooked to perfection, carefully remove them from the skillet. Serve them hot, accompanied by the dipping sauce on the side for a delightful appetizer or main dish.
