Ingredients

1 cup strong brewed coffee (cooled)

2 tablespoons coffee liqueur (optional)

3 large egg yolks

1/2 cup granulated sugar

1 cup mascarpone cheese

1 cup heavy whipping cream

1 teaspoon vanilla extract

1 package ladyfinger cookies (savoiardi)

Unsweetened cocoa powder (for dusting)

Dark chocolate shavings (for garnish)

Instructions

Prepare the Coffee Mixture: In a shallow dish, combine the cooled brewed coffee with the optional coffee liqueur for an added depth of flavor. Set this mixture aside to allow it to infuse.

Make the Egg Mixture: In a medium mixing bowl, use a whisk to blend the egg yolks and granulated sugar together. Continue whisking for about 3-4 minutes until the mixture becomes pale and fluffy, indicating that the sugar has dissolved and the egg yolks have increased in volume.

Incorporate Mascarpone: Carefully fold in the mascarpone cheese into the egg-sugar mixture until you achieve a smooth and uniform consistency. It’s important to be gentle during this step to maintain the light texture.

Whip the Cream: In a separate mixing bowl, whisk the heavy whipping cream and vanilla extract together until stiff peaks form. This step should take a few minutes; be careful not to overwhip to avoid turning the cream grainy.

Combine Cream and Egg Mixture: Gently fold the whipped cream into the mascarpone and egg mixture until you have a luxurious and creamy consistency. Ensure it is well mixed without losing the airy texture.

Assemble the Cups: Take each ladyfinger and quickly dip it into the coffee mixture, making sure not to soak them, as they should retain some firmness. Lay half of the dipped ladyfingers at the bottom of approximately 6 serving cups.

Layer the Cream Mixture: Spoon half of the mascarpone cream mixture over the layer of ladyfingers, spreading it evenly to create a luscious layer.

Repeat the Layers: Follow the same process with the remaining ladyfingers, dipping and arranging them in the cups, and then top with the rest of the mascarpone cream mix. Smooth out the top for a beautiful finish.

Chill: Cover the cups with plastic wrap and place them in the refrigerator. Allow them to chill for at least 4 hours, but for the best flavor meld, chill overnight.

Serve: Just before serving, dust the tops with a generous layer of cocoa powder and sprinkle with dark chocolate shavings. This final touch not only enhances the aesthetic but adds a delicious contrast of flavors.
