8 oz (225g) rotini or farfallini pasta

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1 cup bell peppers (a mix of red and yellow), diced

½ cup red onion, finely chopped

½ cup black or green olives, pitted and sliced

1 cup mozzarella balls, halved (or diced mozzarella)

½ cup fresh basil leaves, torn

¼ cup grated Parmesan cheese

½ cup Italian dressing (use store-bought or a homemade version)

Salt and pepper to taste

Cook the Pasta: In a large pot, bring about 4 quarts of salted water to a rolling boil. Add the rotini or farfallini pasta and cook according to package directions until al dente, usually about 8 to 10 minutes. Once cooked, drain the pasta and rinse it under cold running water to halt the cooking process and cool it down completely. Allow it to drain thoroughly.

    Prepare the Veggies: While the pasta is cooking, wash the cherry tomatoes and cut them in half. Dice the cucumbers and bell peppers, and finely chop the red onion. Place all prepared vegetables into a large mixing bowl. Next, add the sliced olives and halved mozzarella balls to the bowl.
