1 ½ cups pumpkin puree (canned or homemade)

1 cup granulated sugar

½ cup packed brown sugar

½ cup vegetable oil

2 large eggs

1 teaspoon pure vanilla extract

2 cups all-purpose flour

½ teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

½ teaspoon salt

1 cup fresh or dried cranberries

1 cup chopped pecans

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing and flouring it, or you can line it with parchment paper for easy removal after baking.

    Mix the Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Use a whisk to mix these ingredients together until the mixture is smooth and well combined.

      Combine the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt until thoroughly mixed.

        Incorporate Dry Ingredients into Wet Mix: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Avoid overmixing, which can result in a dense bread. A few lumps are perfectly okay!
