Ingredients

8 oz (about 225g) penne pasta

2 tbsp olive oil

1 lb (about 450g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup (240ml) buffalo sauce (adjust based on spice preference)

1 cup (240ml) heavy cream

1 cup (about 100g) shredded sharp cheddar cheese

1 cup (about 100g) cream cheese, softened to room temperature

1 cup (about 150g) diced celery

1/2 cup (about 75g) chopped green onions (scallions)

1 tsp garlic powder

1 tsp onion powder

Salt and freshly ground black pepper to taste

Chopped fresh parsley for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package directions until it reaches al dente texture. Once cooked, drain the pasta and set it aside.

Sauté the Chicken: In a spacious skillet, heat the olive oil over medium-high heat. Add the diced chicken to the skillet, seasoning it with garlic powder, onion powder, salt, and pepper. Sauté the chicken for about 5-7 minutes, or until the pieces are golden brown and fully cooked through.

Make the Sauce: Reduce the heat to medium and incorporate the buffalo sauce into the skillet with the cooked chicken, stirring to ensure all pieces are well-coated. Gradually pour in the heavy cream and add the softened cream cheese. Continuously stir the mixture until the cream cheese completely melts and integrates into the sauce, creating a creamy consistency.

Add the Cheese: Slowly sprinkle in the shredded cheddar cheese while stirring the sauce. Keep mixing until the cheese is fully melted and the sauce is rich and creamy. If the sauce appears too thick, you can thin it out with a splash of reserved pasta water or a bit more heavy cream until you reach your desired consistency.

Combine with Pasta: Add the drained penne pasta directly into the skillet, tossing it in the luscious buffalo sauce to ensure every piece is coated. Gently fold in the diced celery and chopped green onions to introduce a delightful crunch and fresh flavor to the dish.

Garnish and Serve: Once all ingredients are combined, remove the skillet from the heat. Optionally garnish with freshly chopped parsley for a burst of color and flavor. Serve the pasta hot, relishing the spicy, creamy goodness with your loved ones!
