1 tablespoon Cajun seasoning

2 tablespoons olive oil

8 ounces mushrooms, sliced (cremini or button work well)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon Dijon mustard

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking.

    Season the Chicken: Using paper towels, gently pat the chicken breasts dry. Generously rub the Cajun seasoning all over each piece, and add salt and pepper according to your taste preferences.
