Creamy Chicken Alfredo Pasta with Spinach

12 oz fettuccine pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized cubes

2 cups fresh spinach leaves, washed and dried

3 cloves garlic, finely minced

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

1 teaspoon Italian seasoning blend

Salt and freshly cracked black pepper, to taste

Fresh parsley, chopped, for garnish

Cook the Pasta: Fill a large pot with water, add a generous amount of salt, and bring it to a roaring boil. Once boiling, carefully add the fettuccine and cook according to the package instructions until al dente (typically around 8-10 minutes). After cooking, drain the pasta, but be sure to reserve about 1 cup of the starchy pasta water for later use.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the cubed chicken. Season it generously with salt, pepper, and the Italian seasoning. Cook the chicken for approximately 5-7 minutes, stirring occasionally, until it's golden brown and cooked through. Once done, remove the chicken from the skillet and transfer it to a plate to keep warm.

      Cook the Spinach: In the same skillet (no need to clean it), reduce the heat to medium and add the minced garlic. Sauté the garlic for about 1 minute or until it's fragrant, being careful not to let it burn. Then, add the fresh spinach to the skillet and cook for about 2-3 minutes, stirring often, until it has wilted down.

        Create the Sauce: Lower the heat to medium-low and pour in the heavy cream, stirring well to combine with the garlic and spinach. Allow the mixture to come to a gentle simmer. Gradually whisk in the grated Parmesan cheese until it is fully melted and the sauce becomes creamy. If the sauce appears too thick, gradually add the reserved pasta water in small splashes until you reach your desired consistency.

          Combine Everything: Return the sautéed chicken to the skillet with the sauce. Gently add the drained fettuccine and toss everything together until the pasta, chicken, and spinach are well coated in the creamy Alfredo sauce. Taste and adjust the seasoning with additional salt and pepper if needed.
