8 oz (225 g) fettuccine or your preferred pasta

2 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 cups fresh baby spinach

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional, for an added kick)

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of water to a rolling boil, adding a generous amount of salt. Add the fettuccine and cook according to the package instructions, typically around 8-10 minutes, or until al dente. Before draining, reserve 1/2 cup of the starchy pasta water. Drain the pasta and set aside.

    Sauté Garlic: In a large skillet over medium heat, melt the butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant but not browned, stirring continuously to avoid burning.

      Create the Cream Sauce: Carefully pour in the heavy cream, raising the heat slightly to bring it to a gentle simmer. Stir the mixture occasionally for about 3-4 minutes, allowing it to thicken slightly.
