1 medium yellow onion, finely diced

3 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream (or your preferred plant-based alternative)

2 tbsp soy sauce or tamari

1 tbsp Dijon mustard

1 tsp smoked paprika

1 tsp dried thyme

1 tbsp olive oil

Salt and pepper to taste

8 oz (225g) egg noodles or your choice of pasta

Fresh parsley, chopped (for garnish)
