Ingredients

2 tablespoons olive oil

1 medium onion, diced

2 garlic cloves, minced

1 carrot, diced

1 celery stalk, diced

1 red bell pepper, diced

3 cups ripe tomatoes, chopped (or 2 cans of diced tomatoes)

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup heavy cream

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Crusty bread, for serving

Instructions

Heat Olive Oil: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.

Add Aromatics: Incorporate the minced garlic, diced carrot, diced celery, and red bell pepper into the pot. Stir occasionally and cook for an additional 5-7 minutes, or until the veggies begin to soften and the colors brighten.

Incorporate Tomatoes: Add the chopped fresh tomatoes or canned diced tomatoes to the pot. Mix well to ensure the tomatoes are evenly distributed among the sautéed vegetables.

Simmer the Base: Pour in the vegetable broth along with the dried basil and oregano. Season with salt and pepper to taste. Increase the heat until the mixture reaches a boil, then lower the heat and let it simmer gently for about 20 minutes. This will help all the flavors develop and meld together beautifully.

Blend for Creaminess: After simmering, take the pot off the heat. Using an immersion blender, puree the soup until smooth. If you prefer a chunkier consistency, blend about half of the soup and then stir it back into the pot.

Add Cream and Vinegar: Return the pot to low heat and stir in the heavy cream and balsamic vinegar. Allow the soup to heat through for an additional 5 minutes, stirring occasionally to combine all the ingredients smoothly.

Taste and Adjust: Give the soup a taste and adjust the seasoning as needed by adding extra salt, pepper, or a splash more of balsamic vinegar for added tang.

Serve: Ladle the creamy Neapolitan soup into warm bowls, garnishing each with fresh basil leaves for a vibrant touch. Serve alongside slices of crusty bread for dipping.
