Ingredients

4 medium zucchini, spiralized into noodles

1 cup fresh basil leaves, packed

1/2 cup raw cashews (or substitute with pine nuts)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 cloves garlic, minced

1/2 cup extra virgin olive oil

1/4 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1/2 cup heavy cream (or coconut cream for a vegan option)

1/4 cup cherry tomatoes, halved (for garnish)

Additional fresh basil leaves for garnish

Optional: crushed red pepper flakes for a spicy kick

Instructions

Make the Pesto: In a food processor, combine the fresh basil leaves, cashews, grated Parmesan cheese, and minced garlic. Pulse the mixture until it’s coarsely chopped but not pureed, to maintain some texture.

Add Oil and Seasoning: While the processor is running, slowly drizzle in the extra virgin olive oil. Continue to process until the mixture transforms into a smooth and creamy consistency. Pause to scrape down the sides of the bowl if necessary. Season with sea salt and black pepper, then blend again. Taste the pesto and adjust the seasoning according to your preference.

Prepare Zucchini Noodles: Heat a large skillet over medium heat. Add the spiralized zucchini noodles to the skillet and sauté for about 2-3 minutes, stirring occasionally, until the noodles are warmed through and begin to soften, ensuring they still maintain a slight crunch.

Combine Cream and Pesto: In a mixing bowl, blend the prepared pesto with the heavy cream (or coconut cream) until the ingredients are fully integrated and the sauce is creamy and vibrant.

Mix Everything Together: Pour the creamy pesto sauce over the warm zucchini noodles in the skillet. Gently toss the noodles to evenly coat them in the sauce. Allow them to cook for an additional 1-2 minutes, just until everything is heated through.

Serve: Plate the creamy pesto zucchini noodles on individual dishes. Garnish with halved cherry tomatoes, fresh basil leaves, and a sprinkle of crushed red pepper flakes if you desire a touch of heat.

Enjoy! Indulge immediately in this delicious and comforting dish while it’s still warm and creamy!
