Ingredients

8 oz (225g) pasta (choices include spaghetti, fusilli, or penne)

1 head of garlic

2 tablespoons olive oil (divided)

1 cup cooked chickpeas (canned or freshly cooked)

1/2 cup tahini

1/4 cup fresh lemon juice

1/4 cup water (adjust as needed for consistency)

1 teaspoon ground cumin

Salt and pepper to taste

1/4 teaspoon cayenne pepper (optional, for a hint of spice)

1/3 cup grated Parmesan cheese (optional for added flavor)

Fresh parsley or basil, chopped (for garnish)

Cherry tomatoes, halved (optional for a fresh touch)

Instructions

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice the top off the head of garlic to reveal the cloves inside. Drizzle 1 tablespoon of olive oil over the exposed cloves, then wrap the garlic in aluminum foil. Place it in the oven and roast for about 30-35 minutes, or until the cloves are tender and caramelized. After roasting, let it cool for a few minutes. Squeeze the soft garlic cloves out of their skins into a small bowl and set aside.

Cook the Pasta: Meanwhile, fill a large pot with water, add a generous handful of salt, and bring it to a rolling boil. Add your choice of pasta and cook according to the package instructions until it is al dente. Before draining, reserve about 1 cup of the starchy pasta water. Drain the pasta and set it aside.

Make the Hummus Sauce: In a food processor, add the roasted garlic cloves along with the cooked chickpeas, tahini, fresh lemon juice, and ground cumin. Process until the mixture is well combined and smooth. Gradually pour in the reserved water, a little at a time, until you achieve a creamy texture that suits your preference. Season with salt, pepper, and cayenne pepper (if using) to taste. If you’d like a cheesy flavor, add the grated Parmesan cheese and pulse again until it's fully mixed in.

Combine Pasta and Sauce: In a large mixing bowl, gently fold the drained pasta into the hummus sauce until it's fully coated. If the sauce appears too thick, gradually add additional reserved pasta water until you reach your desired creaminess.

Serve: Dish out the creamy hummus pasta onto individual serving plates. Garnish each plate with a sprinkle of freshly chopped parsley or basil, and add halved cherry tomatoes for a burst of color and flavor. For an extra touch of richness, drizzle a little olive oil on top.

Enjoy: Serve immediately while warm, and indulge in your delightful and unique Creamy Roasted Garlic Hummus Pasta!
