Ingredients

8 ounces fettuccine or your favorite pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces cremini or button mushrooms, sliced

6 cups fresh spinach (about 1 bag)

1 cup heavy cream

1 cup vegetable or chicken broth

1 teaspoon dried thyme

Salt and pepper to taste

½ cup grated Parmesan cheese

Red pepper flakes (optional, for added heat)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Once done, reserve ½ cup of the pasta water, then drain the pasta and set it aside.

Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent. Incorporate the minced garlic and sauté for an additional minute, stirring frequently to avoid burning.

Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook, stirring occasionally, for about 5-7 minutes until they release their moisture and turn a golden brown. Season with salt, pepper, and dried thyme.

Add Spinach: Stir in the fresh spinach and cook until it wilts, which should take about 2-3 minutes.

Make the Cream Sauce: Pour in the heavy cream and vegetable or chicken broth. Stir well to combine all the ingredients and allow the mixture to simmer for approximately 5 minutes, or until it thickens slightly.

Combine Pasta: Add the cooked pasta to the skillet, along with the reserved pasta water. Toss everything together, ensuring the pasta is well coated in the creamy sauce. Stir in the grated Parmesan cheese and mix until it melts seamlessly into the dish.

Adjust Seasoning: Taste the pasta and adjust seasoning as needed, adding more salt, pepper, or a pinch of red pepper flakes if you prefer some heat.

Serve: Divide the creamy pasta among serving plates. Garnish generously with fresh parsley and extra grated Parmesan, if desired. Enjoy your delectable dish!

                    - Presentation Tips: Serve the pasta in shallow bowls for an elegant touch, and drizzle a little additional olive oil over the top for shine. You might also consider adding a few whole spinach leaves or sliced mushrooms as a garnish for a pop of color.
