Creamy Sun-Dried Tomato Chicken

4 boneless, skinless chicken breasts

1/2 cup sun-dried tomatoes, chopped (preferably packed in oil for enhanced flavor)

1 cup heavy cream

1 cup chicken broth

1 cup fresh or frozen spinach, roughly chopped

1/2 cup grated Parmesan cheese

3 cloves garlic, finely minced

1 teaspoon dried Italian herbs (or a blend of basil, oregano, and thyme)

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts generously on both sides with salt and freshly ground black pepper, ensuring they are fully coated.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Sear them for about 5-7 minutes on each side or until they develop a golden-brown crust and are fully cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

      Sauté Garlic and Tomatoes: Lower the heat to medium and add the minced garlic into the same skillet. Sauté for approximately 1 minute until fragrant. Next, incorporate the chopped sun-dried tomatoes and continue to cook for an additional 2 minutes, allowing the flavors to meld.

        Create the Sauce: Pour in the chicken broth, using a wooden spoon to scrape up any tasty browned bits stuck to the bottom of the skillet. Allow the broth to simmer for 2-3 minutes. Then, lower the heat to low and gradually stir in the heavy cream, followed by the grated Parmesan cheese. Stir continuously until the cheese is fully melted, creating a luscious, creamy sauce.

          Add Spinach: Fold in the chopped spinach and sprinkle in the dried Italian herbs. Let it cook for another 2-3 minutes or until the spinach has wilted and the sauce has thickened slightly.

            Combine Everything: Gently return the seared chicken to the skillet, spooning the rich creamy sauce over each breast. Let the chicken simmer in the sauce for about an additional 5 minutes, allowing the flavors to combine beautifully.

              Serve: If desired, garnish your dish with fresh basil leaves for a pop of color and flavor. Serve hot over a bed of pasta, fluffy rice, or alongside some crusty bread to soak up every bit of that delicious sauce.
