8 ounces fettuccine pasta

2 tablespoons olive oil

1 pound chicken breast, thinly sliced into bite-sized pieces

Salt and freshly ground black pepper, to taste

4 cloves garlic, minced

1 cup sun-dried tomatoes in oil, drained and roughly chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

1 cup fresh spinach leaves

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente, typically about 8-10 minutes. Drain the pasta and set it aside, reserving a small cup of the pasta water if needed for later.

    Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the sliced chicken breast with salt and black pepper. Add the chicken to the hot skillet and cook, stirring occasionally, until it is golden brown and cooked through, approximately 7-8 minutes. Once done, carefully remove the chicken from the skillet and set it aside on a plate.

      Sauté Aromatics: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté the garlic for about 1 minute, stirring frequently, until it becomes fragrant. Be sure to monitor closely to avoid burning the garlic.

        Add Sun-Dried Tomatoes & Cream: Incorporate the chopped sun-dried tomatoes into the skillet, stirring them with the garlic for an additional 2 minutes. Then, pour in the heavy cream and chicken broth, mixing well to combine. Allow the mixture to come to a gentle simmer.

          Season the Sauce: Sprinkle the Italian seasoning into the sauce, stirring well to incorporate. Let the sauce simmer for approximately 5-7 minutes, allowing it to thicken slightly.

            Finish the Sauce: Stir in the grated Parmesan cheese and fresh spinach leaves. Cook for another 2-3 minutes, or until the spinach has wilted and the cheese has melted smoothly into the sauce.

              Combine Pasta and Chicken: Add the cooked fettuccine and the cooked chicken back into the skillet. Toss everything together gently until the pasta and chicken are well coated with the creamy sun-dried tomato sauce. If the sauce is too thick, add a splash of the reserved pasta water to achieve the desired consistency.
