12 oz spaghetti (or your preferred pasta)

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 2 large lemons

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup fresh lemon juice (approximately 2 lemons)

Salt and freshly ground black pepper, to taste

1 cup fresh spinach leaves, roughly chopped

Fresh basil or parsley, for garnish

Extra lemon zest for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until it reaches al dente texture (usually around 8-10 minutes). Before draining, reserve 1 cup of the starchy pasta water. Drain the pasta and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute, or until the garlic becomes fragrant without turning brown.

      Create the Creamy Base: Reduce the heat to medium-low. Pour in the heavy cream, stirring continuously to ensure even heating. Allow it to gently simmer for 2-3 minutes to thicken slightly.

        Add Flavors: Stir in the lemon zest and fresh lemon juice, mixing thoroughly to integrate the flavors. Gradually sprinkle in the grated Parmesan cheese, stirring until it melts completely into the sauce, creating a rich, creamy consistency. If the sauce appears too thick, gradually mix in some of the reserved pasta water until the desired consistency is achieved.
