1 cup panko breadcrumbs (for an extra crunchy texture)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

2 large eggs

2 tablespoons olive oil (plus more for brushing)

Prepare the Eggplant: Begin by slicing the eggplant into 1/4-inch thick rounds. Place the rounds in a colander and sprinkle them generously with salt. Allow the eggplant to rest for approximately 20 minutes — this process helps remove excess moisture and bitterness. After 20 minutes, rinse the slices thoroughly under cold water to remove the salt, and pat them dry with paper towels to ensure they are as moisture-free as possible.

    Set Up the Breading Station: In a medium-sized bowl, whisk together the eggs until well combined. In a separate bowl, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly blended.

      Coat the Eggplant: Take each eggplant slice and dip it into the egg mixture, allowing any excess liquid to drip off. Following this, dredge the slice in the breadcrumb mixture, ensuring it is fully coated. Press down gently on the breadcrumbs to ensure they adhere well to the eggplant.

        Preheat the Air Fryer: Set your air fryer to preheat at 400°F (200°C) for about 5 minutes, ensuring it reaches the optimal cooking temperature.
