1 can (15 oz) chickpeas, thoroughly drained and rinsed

1 tablespoon extra-virgin olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon sea salt

¼ teaspoon freshly ground black pepper

1 medium bell pepper (any color), sliced into thin strips

1 small red onion, sliced into thin semicircles

2 cups cooked quinoa or brown rice (your choice)

1 ripe avocado, sliced into wedges

Fresh cilantro leaves, for garnish

Lime wedges, for an added zing

Optional toppings: your choice of salsa, Greek yogurt or dairy-free yogurt, shredded cheese, sliced jalapeños
