2 cups cooked, shredded chicken

1 cup of your favorite BBQ sauce

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

2 tablespoons olive oil

1 tablespoon fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Sour cream or guacamole (for serving)

Marinate the Chicken: In a mixing bowl, thoroughly combine the shredded chicken with the BBQ sauce, making sure every piece is well coated. Allow the mixture to marinate for at least 15 minutes to let the flavors blend beautifully.

    Prepare the Filling: In a large mixing bowl, add the marinated chicken along with the shredded cheddar cheese, shredded mozzarella cheese, diced red onion, and corn. Season this filling with salt and pepper according to your taste, and mix until well combined.

      Assemble the Quesadillas: Preheat a large skillet over medium heat then add 1 tablespoon of olive oil. Once the oil is hot, place one flour tortilla in the skillet. Spread a generous portion of the chicken and cheese mixture over one half of the tortilla. Fold the opposite half over to form a semi-circle.

        Cook the Quesadilla: Cook the quesadilla for approximately 3-4 minutes on one side until it turns golden brown and crispy.
