    Prepare the Sweet Potatoes: Rinse the sweet potatoes thoroughly under cold water. Peel off the skin, then cut the sweet potatoes into thin fry shapes, aiming for about 1/4 inch in thickness. Uniformity in size is key for even cooking.

      Soak the Fries (optional): If you desire extra crispy fries, soak the cut sweet potato fries in a bowl of cold water for 30 minutes. This step helps eliminate excess starch. After soaking, drain the fries and dry them thoroughly using a clean kitchen towel to remove excess moisture.

        Coat the Fries: In a large mixing bowl, whisk together the olive oil, cornstarch, Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper. Add the dried sweet potato fries to this mixture and toss well until each fry is evenly coated in the flavorful blend.
