Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 medium zucchini, sliced into half-moons

1 cup broccoli florets, bite-sized

3 cloves garlic, minced

1 tablespoon fresh ginger, finely grated

3 tablespoons soy sauce

2 tablespoons hoisin sauce

1 teaspoon sesame oil

2 green onions, chopped, for garnish

Sesame seeds, for garnish

Salt and pepper, to taste

Instructions

Prepare the Chicken: In a medium bowl, combine the chicken pieces with cornstarch, a pinch of salt, and freshly cracked pepper. Toss well until the chicken is evenly coated. This cornstarch coating is essential for achieving a delightful crispy texture when cooked.

Heat the Skillet: Place a large skillet or wok over medium-high heat. Once hot, add 1 tablespoon of vegetable oil, allowing it to heat until shimmering.

Cook the Chicken: Carefully add the coated chicken pieces to the skillet, ensuring they are in a single, even layer. Avoid stirring for the first 4-5 minutes to allow a crispy golden-brown crust to form on one side. Once golden, flip the chicken and cook for an additional 2-3 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Once cooked, remove the chicken from the skillet and set aside on a plate.

Stir-Fry the Veggies: In the same skillet, add the remaining tablespoon of vegetable oil. Introduce the sliced red and yellow bell peppers, zucchini, and broccoli florets. Stir-fry the vegetables over medium-high heat for about 3-4 minutes, or until they are tender yet still crisp.

Add Aromatics: Stir in the minced garlic and grated ginger. Cook for an additional minute, stirring constantly, until the garlic is fragrant but not burnt.

Combine Ingredients: Return the crispy chicken to the skillet. Pour in the soy sauce, hoisin sauce, and sesame oil. Toss everything together gently, cooking for another 2-3 minutes until heated through and well combined, ensuring the chicken and vegetables are coated with the sauce.

Garnish and Serve: Remove the skillet from heat. Sprinkle the stir-fry with chopped green onions and a generous sprinkle of sesame seeds for added crunch. Serve this vibrant stir-fry over steamed rice or noodles for a complete meal.
