Crispy Chicken Parmesan Tacos

1 lb boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs, beaten

1 cup seasoned breadcrumbs

1/2 cup freshly grated Parmesan cheese

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp salt

1/2 tsp black pepper

1 cup marinara sauce

1 cup shredded mozzarella cheese

8 small taco-size corn tortillas

Fresh basil leaves, for garnish

Olive oil, for frying

Prepare the Chicken: Start by preheating your oven to 375°F (190°C). Next, cut the chicken breasts into thin cutlets to ensure they cook evenly. Season both sides of the cutlets with salt, black pepper, garlic powder, and Italian seasoning to enhance their flavor.

    Set Up the Breading Station: Create a breading station with three separate bowls. In the first bowl, place the all-purpose flour. In the second bowl, beat the eggs until well combined. In the third bowl, mix the seasoned breadcrumbs with the grated Parmesan cheese for added depth.

      Bread the Chicken: Take each chicken piece and first dip it into the flour, ensuring to shake off any excess. Next, coat it in the beaten eggs, allowing any extra egg to drip off, and finally, press it firmly into the breadcrumb and Parmesan mixture, making sure each piece is fully covered.

        Fry the Chicken: In a large skillet, pour in olive oil to a depth of about 1/4 inch and heat it over medium heat. Once the oil is shimmering, carefully add the breaded chicken in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy. Once cooked, transfer the chicken to a plate lined with paper towels to absorb any excess oil.

          Add Cheese and Sauce: After frying all the chicken pieces, arrange them on a baking sheet. Spoon marinara sauce generously over each piece, and top with a hearty sprinkle of shredded mozzarella cheese to create that gooey, melted effect.
