Ingredients

1.5 lbs boneless, skinless chicken breasts

8 oz baby bella mushrooms, sliced

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup balsamic vinegar

1 cup low-sodium chicken broth

2 tablespoons honey

2 tablespoons soy sauce

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (more or less to taste)

Salt and pepper to taste

12 oz pasta (penne or fettuccine recommended)

Fresh basil or parsley, chopped, for garnish

Grated Parmesan cheese, for serving

Instructions

Prepare the Crockpot: Begin by placing the boneless chicken breasts at the base of the crockpot. This allows the chicken to soak up the flavors from the ingredients above during the cooking process.

Layer the Vegetables: Top the chicken with the sliced baby bella mushrooms, finely chopped onion, and minced garlic, ensuring an even layer across the surface.

Make the Balsamic Sauce: In a medium mixing bowl, whisk together the balsamic vinegar, chicken broth, honey, soy sauce, dried oregano, and red pepper flakes. Add salt and pepper to taste; this sauce will infuse the chicken and vegetables with rich flavor.

Combine the Ingredients: Pour the balsamic sauce evenly over the layered chicken and vegetables in the crockpot, making sure everything is generously coated.

Cook the Chicken: Cover the crockpot with its lid and set it to cook on low for 6-7 hours, or on high for 3-4 hours. The chicken is ready when it is tender and easily shreds with a fork.

Prepare the Pasta: About 15 minutes before serving, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente, then drain and set aside.

Shred the Chicken: Once the cooking time is complete, carefully remove the chicken from the crockpot. Using two forks, shred the chicken into bite-sized pieces, then return it to the crockpot, mixing it back into the delicious sauce and vegetables.

Incorporate the Pasta: Add the drained pasta into the crockpot, tossing gently to combine. Ensure the pasta is well coated with the balsamic sauce for maximum flavor.

Plate and Garnish: Serve the pasta directly from the crockpot onto plates or into bowls. Garnish with a generous handful of chopped fresh basil or parsley, along with a sprinkling of grated Parmesan cheese for added richness.

Enjoy: Serve hot and indulge in the delightful and heartwarming flavors of this simple yet delicious crockpot meal!
