Crockpot Chili Mac and Cheese

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 can (6 oz) tomato paste

3 cups beef broth (or vegetable broth for a vegetarian version)

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt (adjust to taste)

1/2 teaspoon freshly ground black pepper

1/2 teaspoon cayenne pepper (optional, adjust based on desired heat level)

2 cups shredded cheddar cheese (divided)

1 cup sour cream (for serving)

Chopped green onions and fresh cilantro (for garnish)

Brown the Meat: In a large skillet over medium-high heat, add the ground beef (or turkey) and cook until browned, stirring occasionally. Once cooked, drain any excess fat from the skillet. Add the diced onion and minced garlic; sauté until the onion becomes translucent, approximately 3-4 minutes. Transfer this flavorful mixture to your crockpot.
