Ingredients

2 ripe avocados, halved and pitted

1 cup seasoned breadcrumbs (Panko preferred for extra crunch)

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small corn tortillas

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro

1 lime, cut into wedges

Optional: Sour cream or Greek yogurt for serving

Instructions

Prepare the Avocados:

    - Gently scoop out the flesh from each avocado half, aiming to keep the skin intact for easier handling. Slice the avocado flesh into thick wedges.

      Set Up Your Breading Station:

        - In one shallow bowl, place the all-purpose flour for coating.

          - In a second bowl, pour in the beaten eggs, whisking to blend.

            - In a third bowl, combine the seasoned breadcrumbs with garlic powder, chili powder, salt, and black pepper to create a flavorful breading mix.

              Bread the Avocado Wedges:

                - Take each avocado wedge and first coat it in the flour, shaking off any excess.

                  - Next, dip the wedge into the beaten eggs, ensuring it is fully coated.

                    - Finally, roll the wedge in the breadcrumb mixture, pressing gently to ensure it adheres well. Set the breaded wedges aside on a plate.

                      Air-Fry the Avocados:

                        - Preheat your air fryer to 400°F (200°C) for approximately 5 minutes.

                          - Lightly spray the air fryer basket with cooking spray. Arrange the breaded avocado wedges in a single layer, ensuring they do not touch each other.

                            - Air-fry the wedges for 8-10 minutes, or until they achieve a golden brown and crispy texture, flipping halfway through the cooking process for even crispiness.

                              Warm the Tortillas:

                                - As the avocados are frying, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable. Alternatively, to microwave, lightly wet the tortillas, wrap them in a damp paper towel, and heat for 20-30 seconds.

                                  Assemble the Tacos:

                                    - Take a warm tortilla and layer a small handful of shredded lettuce as a base. Add a few crispy avocado wedges, followed by diced tomatoes and a sprinkle of chopped cilantro.

                                      - Squeeze fresh lime juice over the top to enhance the flavors.

                                        Serve:

                                          - Repeat the assembly process for all tacos. Serve immediately with extra lime wedges on the side and a dollop of sour cream or Greek yogurt if desired for an extra creamy element.
