2 medium cucumbers, finely diced

3-4 Hatch green chilies, roasted, peeled, and chopped (adjust based on your spice preference)

1 small red onion, finely diced

1/4 cup fresh cilantro, chopped

1/4 cup rice vinegar

2 tablespoons fresh lime juice

1 tablespoon honey or agave syrup

1 teaspoon ground cumin

Place the diced cucumbers in a colander, sprinkle lightly with salt, and let them drain for approximately 15 minutes. This step will help remove excess moisture and maintain their delightful crunch.

    Roast the Hatch Chilies: If you’re using fresh Hatch chilies, roast them over an open flame (or place them under a broiler) until the skins are charred and blistered. Transfer the chilies to a bowl, cover with plastic wrap, and let them steam for about 10 minutes. After steaming, peel off the charred skins, remove the seeds, and chop the chilies finely.

      Combine Ingredients: In a large mixing bowl, combine the drained and diced cucumbers, roasted and chopped Hatch chilies, finely diced red onion, and chopped fresh cilantro, mixing gently to ensure even distribution.
