1 large cucumber, thinly sliced

2-3 Hatch chilies, roasted, peeled, and chopped

8 cups of cold water

1 lime, juiced

A handful of fresh mint leaves

Prepare the Hatch Chilies: Begin by roasting the Hatch chilies until they are blistered and charred. This can be done over an open flame on a stovetop or in the oven at 400°F (200°C) for about 10-15 minutes. Once roasted, transfer the chilies to a bowl and cover with plastic wrap for approximately 10 minutes. This steaming process makes it easier to peel the skin. After steaming, carefully peel off the charred skin, remove the seeds (if you prefer a milder heat), and chop the chilies into small pieces.

    Slice the Cucumber: While the chilies are cooling, wash the cucumber thoroughly. Slice it into thin rounds; you can peel the cucumber beforehand if you prefer, though leaving the skin on provides a delightful crunch and vibrant color to your infused water.
